The idea is to post one or two healthy, kid friendly recipes (ones including leftovers are encouraged) that you found were winners with the kids in your life.
Here is mine…
Pasta and Trees with Cheese
Ingredients:
Leftover pasta (it does keep for at least two days if covered in the fridge)
Butter or Margarine
Grated cheese (almost any hard cheese will work for this)
Bit of Milk
Fresh or frozen broccoli and cauliflower (the trees of course!)
Bread crumbs
Method:
Start vegetables steaming on medium high heat. (It’ll only take a few minutes for fresh, a little longer for frozen.)
Meanwhile, combine butter and cheese in a pot and cook over low medium heat until cheese starts to melt (gets stringy). You might want to add a bit of milk here to smooth out the cheese. This takes about five to 10 minutes (still less time than it takes to make a box of mac and cheese).
Add pasta and steamed vegetables, stir.
Remove from heat and sprinkle liberally with bread crumbs.
Serve.
NOTES:
My kids have always enjoyed this recipe and its upteen variations over the years. I’ve added tomatoes, onions and even cabbage to the mix with nary a complaint.
Honestly though, I don’t think it’s my cooking abilities so much as it is my liberal use of cheese…especially for this recipe.
But still, it got them eating their veggies and made delicious use of leftover pasta.
